FARMING
APPELLATION: Denominazione di Origine Controllata
AREA OF PRODUCTION: Badia Pozzeveri, Altopascio (LU).
SOIL: Medium texture with good presence of small and medium sized pebbles, prevalence of clay
BLEND: Trebbiano (40%), Sauvignon Blanc (30%), Roussane (15%), Semillion (15%)
VINE YEAR OF PLANTING: Between 1964 and 1996
YIELD PER HECTARE: 72 q
TRAINING SYSTEM AND DENSITY: Guyot, 4400\5000 vines per hectare
EXPOSITION: South
PEST MANAGEMENT: Integrated pest control, low environmental impact
FERTILIZATION: Green manure (fava beans) and brown manure.
HARVEST: Between the third week of August and the first week of September, depending on the Variety Hand made, in small baskets, during the first hours of the morning.
WINEMAKING
VINIFICATION: Every Variety is harvested and fermented separately. Grapes are de-stemmed and siphoned to a stainless steel pneumatic press. Skins remain in contact with the grape juice, macerating at a controlled temperature, for a few minutes after pressing.
Then, the must is siphoned to a stainless steel tank, and cooled down to 8 °C to clarify by static sedimentation. The process lasts a maximum of 24 hours, then the must is moved again to the stainless steel fermentation tank. The temperature is gradually increased to 15°C and the selected yeasts are injected. Fermentation lasts up to 6 weeks.
MATURATION: In stainless steel tanks for 90 days after the end of the fermentation. The different varieties are blended in Spring, then the Wine is bottled.
AGING: Two months in glass bottle.

ALCOHOL %: 13,5 (slightly varies based on Vintage)
SUGAR : dry (below 0.2%)
TEMPERATURE OF SERVICE: 8 °C (45 °F)
TASTING NOTES:
COLOUR: Bright straw yellow, green reflexes when young. Turns golden with age.
NOSE: Complex, rich of white flowers (hawthorne and orange flowers), white-pulp fruit.
MOUTH: Refreshing and round, with a delicate bitterness in the aftertaste. Elegant and long-lasting aftertaste.
RECOMMENDED PAIRING: Perfect with delicate flavours and light dishes like Tuscan Panzanella as well as more savoury roasted seafish plates.
