Santo della Badia, Sweet Dessert Wine – 0,75 Liters
BLEND: Trebbiano, Chardonnay, Malvasia
YEAR OF PLANTING: 1956, 1984, 1996.
TRAINING SYSTEM AND DENSITY: Guyot, 3000\4000 vines per hectare
EXPOSITION: South
PEST MANAGEMENT: Integrated pest control, low environmental impact.
FERTILIZATION: Green manure with fava beans, brown manure. 100% Organic
HARVEST: First week of September. Hand made, in small baskets, during the first hours of the morning.
WITHERING: on canes, in a hot and airy room. Grapes are destemmed and soflty squeezed in the pneumatic press. then pumped to a cold stainless steel tank, where the must sits for 24 to naturally clarify via static sedimentation.
FERMENTATION: in stainless steel tanks at a controlled temperature (16 – 20 °C) for 6\10 weeks.
AGEING: 24 months in traditional 50 or 250 liters – chestnut wood barrels (“Caratelli”).
ALCOHOL %: 16
SWEETNESS : Sweet (“amabile”)
SERVING TEMPERATURE: 10\12 °C
TASTING NOTES:
EYES: Amber, bright and deep.
NOSE: Notes of dried dates and plums, scents of chestnut honey, dried nuts, vanilla and cinnamon.
PALATE: Round, delicate and balanced. Pleasantly warm. Finely persistent, reminds candied fruits and balsamic spices.
