FARMING
APPELLATION: Indicazione Geografica Tipica, Toscana
AREA OF PRODUCTION: Badia Pozzeveri, Altopascio (LU).
SOIL: Medium texture with good presence of small and medium sized pebbles, prevalence of sand
UVAGGIO: Vermentino 100%
YEAR OF PLANTING: 1972, 1984, 1996.
YIELD PER HECTARE: 72\78 quintales
TRAINING SYSTEM AND DENSITY: Guyot, 4000 \4800 vines per hectare
EXPOSITION: South
PEST MANAGEMENT: Integrated pest control, low environmental impact.
FERTILIZATION: Green manure (fava beans) and brown manure.100% organic.
HARVEST: First and second week of September. Hand made, in small baskets, during the first hours of the morning.
WINEMAKING
VINIFICATION: Harvested grapes are cryo-macerated with dry ice (CO2), then de-stemmed. The juice is gently extracted by pneumatic press, then pumped to a cold stainless steel tank, where it sits for 24 to naturally clarify via static sedimentation. The temperature is gradually increased to 15°C and the selected yeasts are injected. Fermentation lasts up to 6 weeks.
MATURATION: 90 days in stainless steel tanks, daily batonnage. Then the wine is separated from the lees and left to sit for 30 more days. ”Viatore” is bottled in the first days of Spring,
AGING: Two months in glass bottle.
ALCOHOL %: 13,5 (slightly varies based on Vintage)
SUGAR : dry (below 0.2%)
SERVICE
TEMPERATURE OF SERVICE: 8 °C (45 °F)
LONGEVITY: Two\three years from the bottling date
TASTING NOTES:
COLOUR: Pale straw yellow, green reflexes while young.
NOSE: Delicate nuances of fresh Apple, followed by dried herbs and camomile.
TASTE: Rich body, sour, mineral and fruity. The aftermouth reminds of balsamic herbs and bitter almond.
PAIRING: Vermentino pairs wonderfully with seafish dishes. We would reccommend trying it with Linguine all’Aragosta or grilled Seabass
