AREA OF PRODUCTION: Badia Pozzeveri, Altopascio (LU).
SOIL: Medium texture with good presence of small and medium sized pebbles, prevalence of clay
BLEND: Chardonnay 100%
YEAR OF PLANTING: 1964 and 1996
YIELD PER HECTARE: 72 q
TRAINING SYSTEM AND DENSITY: Guyot, 8000 \10000 vine per hectare
PEST MANAGEMENT: Integrated pest control, low environmental impact
FERTILIZATION: Green manure with fava beans
HARVEST: Last week of August Hand made, in small baskets, during the first hours of the morning.
VINIFICATION: Grapes are de-stemmed and moved in a stainless steel, pneumatic press. Skins remain in contact with the grape juice, macerating at a controlled temperature, for a few minutes after pressing. Then, the must is siphoned to a stainless steel tank, and cooled down to 8 °C to clarify by static sedimentation. The process last maximum 24 hours, then the must is moved a gain to the stainless steel fermentation tank. The temperature is gradually increased to 15°C and the selected yeasts are injected. Fermentation lasts up to 6 weeks.
MATURATION: 90 days in stainless steel tanks, daily batonnage. Then the wine is separated from the lees and left to sit for 30 more days. ”Viatore” is bottled in the first days of Spring,
AGING: Two months in glass bottle.
ALCOHOL %: 13,5 (slightly varies based on Vintage)
SUGAR : dry (below 0.2%)
TEMPERATURE OF SERVICE: 8 °C (45 °F)
COLOUR: Bright straw yellow, green reflexes when young. Turns golden with age.
NOSE: Fruity, tropical and citrusy. Sweet notes of vanilla and a pinch of Acacia honey pop out as the wine ages.
TASTE: Fresh and savoury, lots of tropical fruit. Balsamic notes in the back of the mouth. Gets rounder and smoother with age.
